Bananas Skins with Black-Eyed Peas:
- 4 green banana peels
- 1 tsp. of turmeric
- 2 tsp. of coconut oil
- ½ c black-eyed peas (if you used them fresh, put them to soak overnight)
- ½ tsp. of mustard seeds
- 2 tsp. Of unsweetened grated coconut
- Lime juice
Chop the banana peels into small pieces and put them in a water to boil. Add the turmeric and salt. Add few oil drops in order to prevent the sap from sticking to your pot. Then, simmer until the banana peel pieces become tender. Drain and keep the water for a later use. Next, if you use fresh black-eyed peas, first of all you need to boil them until they become tender. If you use canned, rinse and drain them. Then, heat the coconut oil in a frying pan and add the mustard seeds. Cook on medium heat until they begin to pop. Then, add the black-eyed peas and the boiled peels, stir, and cook for additional 5 minutes. At the end, remove it from the heat and stir in coconut. Finish with lime juice and serve.
Green or yellow banana peel?
